Cheesecake Fluff

Life seems so busy for everyone these days and one of the biggest reasons people give for not cooking healthy is that it takes too much time. It doesn’t have to be that way. Look for simple recipes that you can add to your weekly planning. I’m guilty of thinking dessert has to be elaborate. You know, like the cakes and pies our moms and grandmothers use to make. There is still a time and place for such desserts but I’m talking about good ole simple week night desserts here. For me it’s the last course of the day and it signals I am finished. I always look forward to dessert because I try to have it when I can relax and enjoy every bite. At my house cheesecake is one of the most requested desserts. I’ve found a great alternative that doesn’t take long to mix up and you can enjoy it all week. The best part is that while it cures my sweet tooth, it doesn’t pack a bunch of extra calories. My friend, Sherry Bise Laughters gave me the original recipe and I’ve added the cool whip and milk to give it a smooth and silky texture. Next time you are meal planning add this to your weekly menu. Enjoy!Cheesecake Fluff 1 large carton of nonfat plain Greek yogurt2 packages of sugar free cheesecake flavored pudding mix1 cup Fairlife fat free milk2 tablespoons of fresh lemon juice1 carton of fat free Cool Whip thawed Mix the first 4 ingredients with a mixer until smooth. Fold in cool whip and chill.You can top with fresh fruit or any toppings you like with cheesecake.Makes 12 serving -about 1/2 cup each for 2SP.When I make the berry topping, I use 1 teaspoon of strawberry pie glaze. I don’t use the sugar free glaze because I think it has an aftertaste. Try using the real glaze and just using 1 teaspoon. It’s really enough and you are not getting a lot of calories and sugar from just 1 teaspoon. Sometimes you need real ingredients and this is where portion control is key.

It can even make an elegant dessert for your guest.
