I can’t think of a better comfort food meal than meatloaf and mashed potatoes. Are you kidding me? Surely you can’t consider meatloaf healthy. You can eat this version without all the quilt. My goal is to make the same foods I’ve always loved but make them the with healthier ingredients without compromising the true authentic flavor of the original dish. I’m finding that often the healthy version is as good as the original or sometimes even better. When I think of meatloaf, I always think about dinner at home. My mom made awesome meatloaf and even better mashed potatoes. I have carried on the tradition in my home. Even my son’s friends like to have dinner when meatloaf is on the menu. Last summer my son was fishing in a tournament with one of his buddies. It came up a big thunder storm. They called and asked if they could hang out with us at our camper until the storm passed. Of course the next question out of my son’s mouth was, “Do you have anything to eat?”. We had leftover meatloaf and mashed potatoes. Not a bad snack when you are rained out of fishing, huh? To say the least, his friend, Kyle likes meatloaf. They managed to eat 3/4 of a meatloaf during that rain delay. I think Kyle would like this version also. Give it a try the next time you want to treat your family to a good comfort food classic. They might just bring their friends to dinner. Enjoy!
Meatloaf
Heat oven to 350
Spray a 7×11 baking dish with cooking spray.
Ingredients
1 pound 90/10 ground beef
1 can of black beans (drained, rinsed and pureed)
1/2 cup diced onion
1/2 cup diced green pepper
1/2 cup oats
1/2 cup pureed tomatoes
1/2 cup ketchup
1 beaten egg
2 tablespoons mustard
2 tablespoons worcestershire sauce
Salt and pepper to taste
2 tablespoons of brown sugar alternative. I use Swerve brand. It is zero calories and it is great. * If you use Trivia, remember to add WW smart points.
Mix well and press into a 7×11 baking dish.
Top with an additional 1/2 cup of ketchup and salt and pepper.
Bake at 350 for 50-60 minutes. Be careful and don’t over bake it and dry it out.
