Cinnamon Pecan Pancake

Most days I eat breakfast alone. That doesn’t mean it has to be a bowl of cereal or something boring. I’m all about enjoying every meal. I believe eating intentionally and loving what you eat is a huge part of a healthy lifestyle. If my taste buds aren’t satisfied, I’m going to be reaching for a snack soon after I eat. A few months ago, I started cooking my pancakes in a mug on the days I was in a hurry. I soon discovered I like them just as well as the pancakes I cooked on the griddle. One thing I didn’t like about the mug cooking was it didn’t photograph as well as something in a shallow dish.Yeah, it has to be pretty in pictures. 🙄 Ask my family. 😁 I decided to change up my cooking vessel and I discovered not only did it look better, the texture was much better as well. I have been experimenting with different small ramekins and I think this Cinnamon Pecan Pancake turned out perfect.

Would you ever guess you could prepare this ( and clean up the mess) in less than 5 minutes? Seriously, it doesn’t take that much longer than pouring a bowl of cereal. The great thing about this microwave pancake is the flavor combinations are endless. I was stuck on blackberry and blueberry pancakes but this cinnamon pecan might just be a new favorite. I’m thinking a banana nut version might be in my near future. IHOP is just too far away from me. I’ll just have my own little pancake house in my kitchen. You need to step into your kitchen and give this easy breakfast treat a try. It will keep you satisfied until lunch and you will be looking forward to getting up tomorrow to fix this easy breakfast again. This recipe is so easy your kids could also mix up their own version of their favorite pancake. I’m betting chocolate chip pancakes would be a hit. While you have the kitchen to yourself, try this grown-up version first.

Easy Pecan Cinnamon Pancake

1 small ramekin- The one I use is like the ones you would get pasta in at an italian restaurant. Crazy description, right? What can I say, I’m a foodi!🤷 You can find them at a restaurant supply store or order them off Amazon.

Ingredients

1/3 cup Kodiak Cakes Buttermilk Pancake Mix

1/3 cup water

2 tablespoons of Swerve Brown Sugar Alternative or brown sugar of your choice

6 grams of chopped pecans

1 teaspoon of cinnamon

1/4 cup Sugar Free Syrup of your choice

Fat Free Reddi Wip

1 teaspoon Smuckers sugar free caramel topping ( I put mine in a sandwich bag and microwave it 4 seconds. Snip the tip off the bag and drizzle the caramel over the pancake after it comes out of the microwave.

1 pecan half for garnish (optional)

Directions

Mix the pancake mix and water together and pour into a ramekin that has been sprayed with cooking spray.

Mix the brown sugar blend, cinnamon and pecans. Sprinkle evenly over the top of the pancake batter and do not stir.

Microwave 1&1/2 minutes to 2 minutes. Start with 1&1/2 minutes and add an additional 30 seconds if needed. I find that all microwaves are very different. You will need to adjust the time according to your microwave and to the depth of your ramekin. When you get the time right, the texture will be the same as a pancake cooked on a griddle. Trust me, if it doesn’t turn out the first time, experiment. It’s worth it!

Remove the pancake from the microwave and top with the toppings of your choice. Enjoy!
