Sometimes we think we just don’t have time for breakfast. For me skipping breakfast is setting myself up for failure during the rest of the day. This is especially true if I’m not going to be home in my safe zone. You know exactly where you are going to end up if you leave the house hungry…the dreaded drive-thru. This morning it only took me a couple of minutes to prepare a much healthier alternative that was healthy and delicious. Wake up a few minutes earlier and make time for this recipe soon. It will keep the hunger away and I guarantee it is healthier than most drive-thru choices. It will also be quicker than the drive-thru. This morning I used fresh blueberries and blackberries and created this version of my Pancake in a Cup. It reminded me of blackberry dumplins my mother-in-law use to make. I really wasn’t a fan of them when I was younger, but today I enjoyed going back in time with her. I also discovered I do like blackberry dumplins! Put this recipe on your planner for your busy mornings next week and enjoy!
Pancake in a Cup
5 tablespoons of Kodiak Cakes Buttermilk Pancake Mix
1 packet of sweetener of your choice ( I use a blend of erythritol and Stevia that’s equal to 2 teaspoons of sugar. Most packets of sweetener are equal to 2 teaspoons of sugar so just use what you like.)
4 tablespoons of water
1/4 cup blackberries
1/4 cup blueberries
Mix well in a large mug and microwave 2 minutes. Adjust your cooking time according to your microwave.
Top with your favorite syrup and fat free Reddy Wip and fresh berries.
I used sugar free syrup. Use your favorite brand.

Update**** I’ve started making this pancake in a deep cereal bowl and I like the texture much better. I’m doing that with the 321 Cake as well.
