When it comes to the holidays we all want to find side dishes we can lighten up that our family will still enjoy as much as the original. My recipe for grape salad is a favorite with my family and friends and they don’t mind I’ve switched it up to make it lighter. In fact, most don’t even realize I’ve changed the recipe from the original . I’m really looking forward to serving it this year after finding Swerve brown sugar alternative. This salad keeps well but you won’t have to worry about that because it will be one of the first dishes to disappear. I also like the fact that this salad is a quick fix dish that you can throw together for a last minute party invite. Add grape salad to your menu and if you have turkey or ham leftover, it makes a great salad the day after the feast. Just stir in some diced meat of your choice , a little onion and some celery. Wow, now I’m looking forward to leftovers. Enjoy!
Grape Salad
8 cups seedless grapes (I mix mine with two different kinds of grapes)
1/2 cup pecans
1 package sugar free vanilla pudding and pie filling
4 oz reduced fat cream cheese (softened)
1&1/2 cups plain nonfat Greek yogurt
1/4 cup Fairlife Skim Milk
1 teaspoon vanilla
1/4 cup Swerve brown sugar alternative or 2 tablespoons brown sugar
Beat cream cheese with mixer until smooth.
Add the Greek yogurt and blend well.
Add the pudding mix and incorporate well.
Smooth out with 1/4 cup milk.
Add 1 teaspoon of vanilla and stir well.
Pour dressing over grapes. You can either add your pecans and stir in or reserve to layer on top.
Spread in a 9×13 dish
Sprinkle with pecans and brown sugar blend.
Enjoy!
Makes 10 servings of approximately 1 cup each.
