Is It Dessert or Breakfast

It’s obvious I have a sweet tooth or as my WW leader often says, “A Sweet Mouth”. I love yogurt parfaits because they can pack a healthy punch along with filling my love of sweets. You can find me enjoying this next recipe both for breakfast and dessert. It is so simple to throw together, yet so delicious. You will be anxiously awaiting cranberry season each year. I freeze a few bags of cranberries so I can enjoy this treat all year. Give this recipe a try and you can decide, is it breakfast or dessert?

Cranberry/Orange Yogurt Parfait

1/2 cup plain non fat Greek yogurt

2 tablespoons of erythritol

1/2 teaspoon of vanilla extract

1/3 cup cranberries (chopped)

1/2 orange or 1 cutie (chopped)

2 tablespoons of sugar free raspberry syrup (You can usually find it in the coffee aisle.)

1/4 cup dry oats mixed with 1/2 tablespoon Swerve brown sugar alternative.

Fat Free Reddi Wip

8g sliced almonds

5g sweetened coconut

Mix the yogurt, erythritol and vanilla together until well blended.

Dice cranberries and oranges (I do this in a mini chopper . I find it works better to do them separately because the orange only takes a few seconds.)

After you have the cranberries and orange diced, add the raspberry syrup to them.

You are now ready to begin layering your parfait. You will need a large glass for this. Just begin layering the yogurt, cranberry/ orange mixture and oats. Try to get at least two layers of each. Top with Fat Free Reddi Wip, sliced almonds and coconut.

Enjoy your breakfast. Oh, I mean dessert.

**You can always use your sweetener of choice. I happen to love erythritol and I haven’t experienced any ill side effects from using it. My personal opinion is that it is one of the safer alternatives to sugar. You can certainly use this basic recipe and choose what is best for your needs.

Not promoting a specific supplier, but living in a rural area where finding healthy products is a challenge, I do buy my erythritol and Swerve online.
