I have always loved 7 layer salad and it can be flipped around to suit your menu or your family’s taste. No peas for me please! It can even have more than 7 layers. I was so surprised when I discovered that this delicious side dish could actually fall in the healthy category . I made a few tweaks to bring the fat and calories down without any compromise to the flavor of our favorite potluck sidekick. Really, bacon and cheese on a diet? I’m not on a diet! I’m changing my lifestyle and recipes to be healthier. I’m still living a full life with all the things I’ve always loved. Just a little healthier. So, with that being said, last nights cookout menu included 7 layer salad. You can use this recipe for a simple base to get started. Add the veggies your family likes. Just don’t forget the bacon and cheese! Enjoy!
***This Salad is much better if it sits overnight. Unfortunately, it will not keep more than a couple days. I make this exclusively for large gatherings because it makes a large container. You might experiment and keep the lettuce separate if you wanted this as a meal prep item. The other veggies will hold nicely for a few days.
7 Layer Salad
Layer in a large clear container. (You want your beautiful layers to show through.)
1 head of lettuce torn in bite sized pieces
1 carton of cherry tomatoes
3 cups chopped broccoli
1 cup chopped red cabbage
1/2 cup onion cut into slivers ( I like cutting it into slivers because you don’t get a big bite of onion and the flavor disperses through the salad better.
1 orange pepper diced
Dressing
1 cup plain nonfat Greek yogurt
5 tablespoons Hellman’s light mayonnaise
1 tablespoon sugar
1 tablespoon erythritol
1/2 teaspoon salt
1/2 teaspoon pepper
Mix together and spread over the salad.
Top with 1&3/4 cup fat free cheddar cheese
1 – 12 ounce package of center cut bacon cooked crisp and crumbled. I blot it very well with paper towels.
I compared turkey bacon and center cut bacon. I decided I would go for the center cut because the difference in nutritional information was not enough to jeopardize the flavor of the salad. I thought the center cut bacon would bring back that familiar flavor most people remember about this salad.
