Why have I waited so long to try something so healthy and delicious? I mean Weight Watchers even featured a recipe for a burrito bowl when Freestyle kicked off. Still I waited! Why? I really didn’t think I would like them. Then all of the sudden I had a craving for one. How could I crave something I had never tried? 💁🏻 I can tell you burrito bowls will be a regular at my house. I absolutely love them. I’m already thinking of how convenient they would be for my next party. And did I say healthy? I will admit they require a few more ingredients than most of the recipes I share but some of the ingredients will be basic pantry staples. Things you probably have on hand each week anyway. I hope you won’t wait as long as I did to give this recipe a try. Oh, and if your family is picky, call it a taco salad. 😉
(You will gather the amounts based upon the number of servings you will need. This recipe will have a list of ingredients but the measurements will be for 1 serving.)
I used my basic taco meat filling for the base. It is a healthier version that I’ve created and 1 serving is 0SP.
Taco Filling (or meat topping)
This will make several 1/4 cup servings. It’s always plenty for taco night for the family and we also get several burrito bowls from this recipe.
1 pound boneless skinless chicken breast (cut into chunks and grind in the food processor)
1 can black beans (drain, rinse and purée in the food processor )
1 package of taco seasoning
1 package (1 serving) sodium free beef bullion
1 cup of water
Brown the chicken in a large skillet.
Stir in the rest of the ingredients.
Cook until the mixture thickens slightly.
I use this filling for tacos or burritos. It made a great topping for the burrito Bowls.
Cook 1 box of Zatarain’s Cilantro Lime flavored rice. I prepared mine with just water. It calls for 2 & 1/4 cups of water+ margarine. I just used 2 &1/2 cups of water and no margarine. This will also make several servings. Enough for the family to make burrito bowls.
The rest of the ingredients will just be prep items and you can omit or add items to suit your taste.
Shredded Reduced Fat Cheddar Cheese
Shredded reduced fat mozzarella
Light sour cream
Non-Fat plain Greek yogurt
For my burrito bowl I started with a layer of lettuce in the bottom. Then I added 1/4 cup each of the following:
Salsa, diced pepper, diced onion, rice, tomato, corn and black beans. In the center, I layered 1/4 cup of the taco meat plus .5 ounce shredded reduced fat mozzarella and .5 ounce shredded reduced fat sharp cheddar cheese.
You can top it with 2 teaspoons light sour cream mixed with 2 tablespoons non-fat plain Greek yogurt. Sprinkle with fresh cilantro and squeeze fresh lime juice over the entire dish.
