Mona’s Cooked Apples

I couldn’t name this recipe anything but Mona’s Cooked Apples. I shared this recipe a couple years ago when I joined Weight Watchers. I was the new kid on the block and I was looking for a way to connect to my group. I didn’t have much in the way of experience to share so, I was always afraid to speak during the meeting. Then came the day I shared my cooked apples recipe, they liked me and my recipe! You see, Weight Watchers peeps are always looking for recipes that fit into healthier eating yet taste great. I must have shared this recipe at least every meeting for a month. It was an old standby that I actually spun off of a recipe for Weight Watchers Strawberry Pie. I decided to take the cooked vanilla pudding from the strawberry pie recipe and try it with apples. It turned out very good. It reminds me of the famous Cracker Barrel Apples just a lot healthier. Today it’s my pleasure to share my first Weight Watchers recipe. The possibilities are endless to the ways you can use this delicious filling. I hope you will add this recipe to your menu and enjoy it for many years to come.

Mona’s Cooked Apples

6 apples peeled and sliced

1 cup of water

1 package of sugar free cook and serve vanilla pudding

Cinnamon (Optional)

1/2 tablespoon butter

1 teaspoon vanilla

Cook pudding and 1 cup of water until slightly thickened. You must stir constantly. Add sliced apples and reduce heat to low. Cook until the apples are tender. Remove from heat and stir in butter and vanilla.

Weight Watchers 2SP Makes 4 – 1/2 cup servings

This is excellent as side dish. It can also be used as a topping for pancakes, french toast, or ice cream. Try it in a great cobbler or pie. Enjoy!
