Clay’s Chicken Casserole

There is something special about cooking for your children. I always tried to cook great meals for my family when they were at home. I wanted them to always remember that cooking for them wasn’t a chore, it was something I done with great pride. My son has just recently moved out and he likes to do the same. It does this momma’s heart so much good to see that he got something from me since he was mostly following his dad around through the woods or on the golf course. I knew I always had his heart if I had a chicken casserole waiting on him when he got home. Same still rings true today. My recipe is just the classic chicken casserole that my grandmother made for me back in the 70’s. I have added some spices to give the boxed dressing mix a little extra flavor. Clays Chicken Casserole

1 pound of cooked and shredded skinless boneless chicken breast (Don’t shred too fine)

1 can cream of chicken soup

1 can cream of celery soup

1/2 cup plain non-fat Greek yogurt

1/2 cup of warm water

1/2 cup diced onion

1/2 cup diced celery

1 box chicken flavored stuffing mix

2 cups chicken broth

1 teaspoon poultry seasoning

1/2 teaspoon of sage

Mix soups, water and yogurt until smooth.

Fold in chicken breast and spread the mixture in a 9×13 pan.

Cook onions and celery in the microwave 3 minutes. Add dressing mix, spices and chicken broth and stir well. Let it rest about 3-4 minutes until the dressing mix absorbs the liquid.

Drop dressing mix over chicken mixture and gently spread to cover the filling.

Bake at 350 for 45 minutes

Weight Watchers Tip: This recipe calculates to 5SP per serving. I get 8 large servings from a 9×13 pan. I decided to go back to regular cream soups because I thought the fat free soups compromised the flavor. We don’t eat this everyday but when Clay’s coming over, I want to have the traditional recipe. I like to pre-plan my day so I can fit this into my daily planner with no worries. Being able to eat traditional southern favorites without stress is why WW works for me. Pre-planning is my key to success.
