321 Cupcakes

Who doesn’t love a cupcake? Take a look around and you will probably find a shop in your town dedicated to this famous treat. Marry the cupcake and 321 cake together and you have a great dessert for any evening meal or a great treat for the lunch box. Whatever the occasion, you are going to love this lightened up version of a cupcake. You can even jazz it up just like your favorite flavor from the bakery. The great thing about this recipe is you only need to cook as many as you need. Of course they are so good, it will be hard to cook just 1.

321 Cake

1 Angel Food Cake Mix

1 Sugar Free Cake Mix

Mix together in an airtight container.

**** For chocolate cake mix I add an additional cup of cocoa powder. This intensifies the chocolate flavor that is diluted from the angel food cake mix.

****If you are using sugar free yellow cake mix, you can add spices to increase the flavor of the yellow cake mix. William Sonoma has a good vanilla bean powder. You could also use the classic spices of a spice cake. Be creative and make it your favorite flavor.

Mix 3 tablespoons of dry mix and add 2 tablespoons of water.

Line a small baking dish with a cupcake liner. Fill with the cake batter and bake in the air fryer @

6 minutes on the cake setting or 310.

Bake as many cupcakes as you need.

****I placed 1 tablespoon of chocolate frosting in the tip of a sandwich bag. Snipped off a small corner of the bag, and drizzled the icing over three cupcakes. It was amazing how 1 teaspoon was plenty of icing on each cupcake. It really is about small changes. You will be amazed at how satisfying these cupcakes are. It’s all about not feeling deprived while making changes for healthier living.

For those following Weight Watchers, 3SP per cake and 1SP per teaspoon of icing.

That’s right, a cupcake with icing for 4SP!

    Can you make them without an airfryer?

    1. Becky, I have not made them in the oven. I feel sure they would be great. Try them @350 for about 12 minutes. I would check at 12 and you may possibly need to cook them about 15. Be cautious and don’t overcook. Let us know how they turned out.
