Breakfast Is A Meal (pancake in a mug and iced coffee)

I can’t believe it has taken me this long to write about my favorite meal of the day, breakfast. Before I started Weight Watchers I didn’t give much thought to the first meal of the day. As I mentioned in an earlier post, I usually had coffee and a snack cake , or two. I remember my mother urging us to eat breakfast when I was in my teens. Yuck! The thoughts of eating a meal first thing in the morning was just gross to me. Unless, it was served on a Saturday morning around 10:00 am. In fact, my own children only have memories of breakfast on the weekends. Shortly after joining Weight Watchers, I began to experiment with this thing called breakfast. I found it soon became my favorite part of the day. Could it possibly be because I was on a “diet” and they were encouraging me to eat more? Whatever the reason, I was hooked. I began to experiment and realize I could eat a balanced breakfast and set the pace for a successful day. Not to mention that breakfast food is awesome. I love it all, from simple bacon and eggs, to fluffy pancakes. I realize most of you don’t have the luxury of cooking a big breakfast before work. I thought I would share two quick recipes that you can use on those morning you need to run out the door. I feel confident you will be choosing these over the Golden Arches. They are simple, delicious and most importantly they are satisfying and nutritious.

Pancake in a Mug

1/3 cup Kodak Cakes Pancake Mix

1/3 cup water

Stir together in a microwaveable mug and cook for 2&1/2 minutes

Cook 1/2 cup sliced frozen strawberries for 2 minutes in the microwave.

Stir 1/4 cup sugar free syrup with the strawberries and stir.

Pour over the pancake in the mug and enjoy. You can eat this on the go or maybe even prepare it at work if you need to.

I also love fat free Reddi Wip on mine.

Weight Watchers Note: Serves 1 @ 4SP

Iced Coffee

1/2 Premier Protein Chocolate shake

1/2 tablespoon salted caramel flavored Skinny Syrup

1 large glass of ice

fill the glass the rest of the way with brewed coffee or cold brew.  (Cold brew is my favorite)

Pour ingredients over the ice and stir. Top with two tablespoons of fat free Reddi Wip and enjoy.

I have this iced coffee every morning with my breakfast and it keeps me from getting hungry before lunch.
